    Ingredients: half cup chocolate chips, 1 1/2 tablespoons butter, 1/4 cup prune puree, 1/2 teaspoon instant coffee, 2 teaspoons vanilla extract, 1/4 cup brown sugar, 1/2 cup stevia sweetener, one beaten egg, 1/4 cup cocoa powder, 1/2 teaspoon baking powder, 1/4 cup all-purpose flour

    Directions: Preheat your oven to 325 degrees and coat a 12-cup muffin tin with some baking spray. Then combine chocolate chips and butter in a medium bowl. Microwave these on high setting for one minute and whisk to completely melt them. Then add prune puree, instant coffee, vanilla extract, stevia sweetener, and brown sugar. Stir these until smooth. Then stir in the beaten egg as you add cocoa powder, baking powder, and flour. Spoon two tablespoons of batter into each muffin tin. Bake for 10 minutes and let cool on a wire rack for 15 minutes.

    2. Chocolate Peanut Butter Cups

    Ingredients: two pieces of dark chocolate and 1/2 tablespoon peanut butter

    Directions: Melt one piece of dark chocolate and pour it into the bottom of a mini-muffin wrapper. Place the wrapper in the freezer for a few minutes to allow the chocolate to cool and harden. Top the chocolate at the bottom with peanut butter. Then melt the other piece of chocolate and place it on top of the peanut butter. Freeze again until solid.

    3. Peanut Caramel Popcorn


    Ingredients
    : 1/4 cup brown sugar, 1/4 cup maple syrup, 4 tablespoons softened butter, one tablespoon molasses, 1/2 teaspoon salt, 2 teaspoons vanilla extract, 1/2 teaspoon baking soda, 8 cups air-popped popcorn, one cup dry-roasted peanuts

    Directions: Preheat your oven to 200 degrees and spray a baking sheet with cooking spray. In a saucepan, combine the brown sugar, syrup, butter, molasses, and salt. Bring these to a boil over high heat. Then reduce the heat to medium and cook for five minutes, stirring occasionally. Remove from heat, and add the vanilla and baking soda until combined. Mix the popcorn and peanuts in a bowl, then pour the sugar mixture on top until coated. Spread the popcorn mixture onto the baking sheet, and bake for 45 minutes. Be sure to stir occasionally.

    Each serving contains 250 calories.

    4. Carrot Pumpkin Bars


    Ingredients
    : one cup canned pumpkin, one cup shredded carrots, 1/2 cup sugar, 1/3 cup dried raisins, 1/4 cup canola oil, 2 large eggs, one cup whole grain pastry flour, one teaspoon baking powder, one teaspoon cinnamon, 1/2 teaspoon baking soda, 1/4 teaspoon salt, 1/4 cup chopped walnuts

    Directions: Coat a 13”x9”x2” baking pan with cooking spray. Preheat your oven to 350 degrees. Combine the pumpkin, carrot, sugar, raisins, oil, and eggs in a bowl and stir until blended. Then add the flour, baking powder, cinnamon, baking soda, and salt until blended. Pour the mixture into the pan, sprinkle with walnuts, and bake for 25 minutes.

    Each serving has 100 calories.

    5. Peanut Brittle

    Ingredients: 3/4 cup sugar, 1/4 cup corn syrup, 1/4 teaspoon salt, 1 cup dry-roasted peanuts, 2 tablespoons margarine, one teaspoon vanilla extract, 1/2 teaspoon baking soda

    Directions: Coat a baking sheet with cooking spray and combine sugar, corn syrup, and salt in a saucepan. Bring to a boil, stirring occasionally for five minutes, or until the sugar is dissolved. Add the peanuts, margarine, and vanilla extract. Mix these until the margarine is melted. Then remove from the heat and stir in the baking soda. Pour the mixture onto the baking sheet. Be to spread the mixture over the entire sheet with a wooden spoon. Let the mixture cool for one hour.

    Each serving contains 240 calories.

    Ingredients: one cup sugar, one cup half-and-half, 2 1/2 cups one-percent milk, 2 1/2 tablespoons cornstarch, 1/2 cup one-percent milk, one teaspoon vanilla extract, 3/4 teaspoon cinnamon

    Directions: Mix together the sugar, half-and-half, and 2 1/2 cups of milk in a saucepan over medium heat. Then in a bowl whisk together the cornstarch and the 1/2 cup milk. Stir the mixture into a pan and boil and cook it for two minutes. Strain the mixture into a bowl and add the vanilla and cinnamon. Chill until cold and process in an ice cream maker. Freeze for two hours.
